Sundried Tomato Spinach Chicken is a creamy, one-pan meal with tender chicken, vibrant spinach, and rich sun-dried tomato sauce ready in 35 minutes.


Ingredients

  • 1.5 lbs boneless skinless chicken cutlets, filleted and pounded thin
  • 1/2 cup sun-dried tomatoes, oil-packed and sliced
  • 3 tablespoons sun-dried tomato oil
  • 5 garlic cloves, thinly sliced
  • 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1/2 cup low-sodium chicken broth
  • 3/4 cup heavy cream (full-fat)
  • 8 oz fresh baby spinach
  • 1/2 cup Pecorino Romano cheese, grated
  • 1/4 cup basil leaves, hand-torn
  • 1/2 cup flour for dredging
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with salt and pepper, then dredge in flour and shake off excess.
  2. Heat a stainless steel pan over medium heat for 3 minutes. Add tomato oil and sear chicken for 3 minutes per side until golden. Set aside and tent with foil.
  3. Reduce heat to medium-low. Sauté garlic until fragrant, then add sun-dried tomatoes and cook for 30–60 seconds.
  4. Pour in white wine, increase heat to high, and deglaze the pan by scraping up browned bits. Cook for 1–2 minutes.
  5. Add chicken broth and simmer for 3 minutes.
  6. Stir in heavy cream and Pecorino Romano cheese until the sauce is smooth.
  7. Add spinach and cook for 3–5 minutes until the sauce thickens.
  8. Return chicken to the pan and coat in sauce. Heat through.
  9. Top with fresh basil and serve hot with crusty bread or side of choice.
