- 2 large Zucchinis
- 1 cup Otamot Essential Marinara Sauce
- 1 tablespoon Olive oil
- 2 cups fresh spinach, chopped
- 2 cloves Garlic, minced
- 1 cup ricotta cheese
- ΒΌ cup parmesan cheese
- 2 tablespoons fresh basil, chopped, plus more for garnish
- 1 teaspoon salt
- Β½ teaspoon black pepper
- ΒΎ cup shredded mozzarella cheese
- Β½ cup cherry tomatoes
Instructions
- Cut off the stalk of each zucchini and use a vegetable peeler to peel thin slices. Arrange slices on a paper towel, salt lightly, and let them sit for 10 minutes.
- Preheat oven to 425Β°F (220Β°C). Spread marinara sauce in a baking dish.
- In a skillet over medium heat, warm olive oil and cook spinach and garlic until spinach wilts. Remove from heat and mix in ricotta, parmesan, basil, salt, and pepper.
- Lay out three zucchini slices forming a cross, place filling in the center, and fold to make ravioli. Place seam-side down in the baking dish.
- Arrange cherry tomatoes around the ravioli and bake for 15-20 minutes. Broil for an additional two minutes to blister the tomatoes.
- Serve garnished with fresh basil.
