- 2 pounds Yukon gold potatoes, chopped into ΒΎ-inch pieces (peeling optional)
- Salt, for the potato cooking water
- 2 ribs celery, finely chopped
- β cup finely chopped red onion
- 3 hard boiled eggs, coarsely chopped
- Paprika, optional topping
- ΒΎ cup mayonnaise
- ΒΌ cup sweet pickle relish
- 2 tablespoons apple cider vinegar (or white vinegar)
- 1 tablespoon Dijon mustard (or yellow mustard)
- 1 teaspoon celery seed
- Β½ teaspoon salt (or to taste)
- ΒΌ teaspoon pepper (or to taste)
Instructions
- Place chopped Yukon Gold potatoes in a large pot and cover with water about 2 inches above the potatoes. Bring to a boil, add about 2 teaspoons of salt, and cook for 6β9 minutes until just fork-tender. Drain well and let cool for about 20 minutes.
- In a small bowl, whisk together mayonnaise, pickle relish, vinegar, mustard, celery seed, salt, and pepper to make the dressing.
- Transfer the cooled potatoes to a large bowl and gently toss them with the dressing. Add chopped celery, red onion, and eggs, stirring gently to combine. Taste and adjust salt and pepper as needed.
- Cover and chill in the refrigerator before serving. Stir before serving and sprinkle with paprika if desired.
