Description

This Traditional Dutch Poffertjes Recipe brings a delightful taste of the Netherlands into your home with fluffy, sweet mini pancakes that are easy to make and perfect for any occasion.

Ingredients

Scale
  • 1 1/2 cups milk (375ml), very warm but not hot
  • 2 1/2 tsp instant yeast (7g, slightly heaped)
  • 2 cups plain flour / all-purpose flour (280g)
  • 1 egg
  • 1/4 cup sugar
  • 2 tbsp butter (25g), softened or melted
  • 1/2 tbsp icing sugar / powdered sugar for dusting

Instructions

  1. Start by mixing the flour, sugar, and yeast in a large mixing bowl, creating a well in the center. Gradually pour the warmed milk and egg into the well, and whisk the mixture into a smooth batter.
  2. Cover the bowl with a tea towel and let the batter rise for about an hour, until it doubles in size and becomes bubbly.
  3. Heat a poffertjes pan or frying pan over medium heat and grease it with butter. Pour heaped tablespoons of batter into each well of the poffertjes pan. If you’re using a frying pan, make sure to leave some space between each mini pancake.
  4. Watch for bubbles forming on the surface; once they start to pop (after 1-2 minutes), flip each poffertje using a chopstick or skewer. Allow the other side to cook for another minute or two until puffed up and cooked through. Repeat with the remaining batter.
  5. Once cooked, serve the poffertjes while they’re still hot, dusting them generously with icing sugar. Consider adding toppings like a pat of melting butter, jam, or nutella.

Notes

  • Ensure that the milk is warm, not hot, to avoid killing the yeast.
  • Allow the batter to rise adequately for a fluffy texture.
  • A poffertjes pan is recommended for the best results but a takoyaki or frying pan can be used in a pinch.
