Ingredients

Scale
  • 1 sheet of Puff Pastry (8.5 oz)
  • 1 Egg
  • ΒΎ cup whole milk ricotta cheese (8 oz)
  • ΒΌ cup grated Parmigiano-Reggiano (4 oz)
  • 1 teaspoon kosher or sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoon fresh basil, minced, plus more for garnish
  • 1 teaspoon Garlic powder
  • 1 teaspoon dried oregano
  • Β½ lb mini heirloom tomatoes, halved
  • 1 tablespoon olive oil
  • Flaky sea salt to finish

Instructions

  1. Preheat your oven to 425Β°F and line a baking sheet with parchment paper.
  2. Unroll the puff pastry onto a cutting board and slice it into 9 evenly sized rectangles. Carefully cut a smaller rectangle inside each, leaving a quarter-inch border.
  3. In a mixing bowl, combine ricotta cheese, Parmigiano-Reggiano, salt, pepper, minced basil, garlic powder, and oregano to form a smooth spread. Crack the egg into a separate small bowl, whisk, and set it aside for the egg wash.
  4. Place the prepared puff pastry rectangles about an inch apart on the baking sheet. Spoon about 1Β½ tablespoons of the cheese mixture onto the center of each rectangle, spreading it evenly within the boundaries. Arrange the sliced tomatoes on top of the cheese layer.
  5. Brush the tomatoes lightly with olive oil and apply the egg wash to the puff pastry borders for a golden finish.
  6. Bake for about 20 minutes, turning the baking sheet halfway through to ensure even cooking. Once golden and puffed, remove from the oven, allow to cool slightly on a wire rack, then garnish with fresh basil and a sprinkle of flaky salt before serving.

Notes

  • Ensure your puff pastry is adequately thawed but still cold to achieve beautifully risen edges.
  • Keep an eye on the baking time to prevent burning; start checking around the 18-minute mark.
