  • 1 large egg
  • 3.5 tablespoons rice flour

For Frying:

  • 2 cups tapioca starch (or sweet potato starch)
  • 1.5 cups Thai basil
  • Neutral oil, for deep frying

Seasoning Mix (to sprinkle while hot):

  • Chili powder
  • Paprika
  • Five-spice powder
  • White pepper
  • Garlic powder
  • Salt

Instructions

  1. Marinate the Chicken:
    In a bowl, combine soy sauce, cooking wine, garlic, and five-spice powder.
    Add chicken and marinate for 20 minutes.
    Mix in rice flour and egg to form a sticky wet batter.
  2. Prep for Frying:
    Coat marinated chicken pieces in tapioca starch.
    Let rest for 5–7 minutes to allow the starch to adhere well.
  3. Fry Thai Basil:
    Heat oil to medium-high (around 350°F/175°C).
    Fry Thai basil for 30–60 seconds until crispy. Remove and set aside.
  4. Fry the Chicken:
    Fry chicken in batches for 4–5 minutes until golden brown.
    Optional: Increase heat and double fry for 1 more minute for extra crispiness.
  5. Final Touches:
    Return fried basil to the oil for another 30 seconds, if desired.
    While chicken is still hot, sprinkle generously with the seasoning mix.
