  • 1/2 cup crumbled Cotija cheese, extra for topping
  • 1 tsp chili powder
  • Salt and pepper, as needed
  • 1 tbsp lime juice (to taste)
  • 3 cups prepared rice
  • Fresh cilantro leaves, for garnish
  • Lime wedges (from 1 lime)
  • Reserved sour cream and Cotija cheese, for garnish

Instructions

  1. Mix lime juice, avocado oil, chili powder, cumin, garlic, salt, and black pepper in a bowl. Add chicken and marinate for 15โ€“30 mins.
  2. Heat a skillet over medium-high heat. Cook chicken for 8โ€“10 mins per side until cooked. Let rest, then slice.
  3. Combine corn, red onion, half of the sour cream, mayo, Cotija cheese, chili powder, salt, pepper, and lime juice in a bowl.
  4. Warm rice and fluff with a fork. Portion into serving bowls.
  5. Top rice with chicken and corn mix. Garnish with extra cheese, cilantro, and lime wedges. Drizzle with reserved sour cream.
