- 1/4 tsp ground black pepper
- 1 cup sweet corn kernels (grilled or sautรฉed from frozen)
- 1/4 cup sliced red onion
- 1/2 cup sour cream, separated
- 2 tbsp mayonnaise
- 1/2 cup crumbled Cotija cheese, extra for topping
- 1 tsp chili powder
- Salt and pepper, as needed
- 1 tbsp lime juice (to taste)
- 3 cups prepared rice
- Fresh cilantro leaves, for garnish
- Lime wedges (from 1 lime)
- Reserved sour cream and Cotija cheese, for garnish
Instructions
- Mix lime juice, avocado oil, chili powder, cumin, garlic, salt, and black pepper in a bowl. Add chicken and marinate for 15โ30 mins.
- Heat a skillet over medium-high heat. Cook chicken for 8โ10 mins per side until cooked. Let rest, then slice.
- Combine corn, red onion, half of the sour cream, mayo, Cotija cheese, chili powder, salt, pepper, and lime juice in a bowl.
- Warm rice and fluff with a fork. Portion into serving bowls.
- Top rice with chicken and corn mix. Garnish with extra cheese, cilantro, and lime wedges. Drizzle with reserved sour cream.
