  • ΒΌ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 Β½ cups graham cracker crumbs
  • β…“ cup granulated sugar
  • Β½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ΒΌ cup heavy cream

Instructions

  1. Cook strawberries, sugar, and lemon juice in a saucepan over medium heat until soft. Mash into puree, add cornstarch slurry, cook until thick, then cool.
  2. Preheat oven to 325Β°F (160Β°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Cool crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and heavy cream until combined. Do not overmix.
  4. Pour cheesecake filling over the crust. Drop spoonfuls of strawberry sauce on top and swirl with a knife to create a marbled pattern.
  5. Place the springform pan in a larger dish with 1-2 inches of hot water for a water bath. Bake for 55-65 minutes.
  6. Turn off oven, crack the door open, and allow cheesecake to cool inside for 1 hour. Refrigerate for at least 6 hours or overnight.
  7. Serve with more strawberry sauce or fresh berries.
