Ingredients
Scale
For the Cookies:
- 1 ½ cups white sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 3 tablespoons fresh strawberry purée (or 2 teaspoons strawberry extract)
- 2 ¾ cups all-purpose flour
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
For Coating:
- ½ cup white sugar
- 1 teaspoon red colored sugar (optional)
Instructions
- Preheat & Prep:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. - Cream Butter & Sugar:
In a mixing bowl, use an electric mixer to cream together the softened butter and 1½ cups sugar until fluffy, about 3 minutes. - Mix Wet Ingredients:
Add egg and strawberry purée (or extract) to the creamed mixture. Beat until combined. - Combine Dry Ingredients:
In a separate bowl, whisk together flour, baking powder, salt, and vanilla extract. - Form the Dough:
Gradually incorporate the dry mixture into the wet mixture until a dough forms. If dough is too sticky, refrigerate for 15 minutes. - Prepare Sugar Coating:
In a shallow bowl, combine ½ cup white sugar with red colored sugar (optional). - Shape Cookies:
Roll dough into walnut-sized balls. Coat each ball in the sugar mixture. - Bake:
Place coated dough balls 1½ inches apart on prepared baking sheets. Gently press each ball to flatten slightly.
Bake for 10–15 minutes, or until edges are lightly golden and centers are still soft. - Cool:
Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use freeze-dried strawberries for a bolder berry flavor without extra moisture.
- Add white chocolate chips or a glaze drizzle for an indulgent twist.
- Chill the dough for 15 minutes if it’s too sticky to handle.
- These cookies freeze well just store baked cookies in an airtight container.
