For the Cookies:

  • 1 ½ cups white sugar
  • 1 cup unsalted butter, softened
  • 1 large egg

  • ½ teaspoon baking powder

For Coating:

  • ½ cup white sugar
  • 1 teaspoon red colored sugar (optional)

Instructions

  1. Preheat & Prep:
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream Butter & Sugar:
    In a mixing bowl, use an electric mixer to cream together the softened butter and 1½ cups sugar until fluffy, about 3 minutes.
  3. Mix Wet Ingredients:
    Add egg and strawberry purée (or extract) to the creamed mixture. Beat until combined.
  4. Combine Dry Ingredients:
    In a separate bowl, whisk together flour, baking powder, salt, and vanilla extract.
  5. Form the Dough:
    Gradually incorporate the dry mixture into the wet mixture until a dough forms. If dough is too sticky, refrigerate for 15 minutes.
  6. Prepare Sugar Coating:
    In a shallow bowl, combine ½ cup white sugar with red colored sugar (optional).
  7. Shape Cookies:
    Roll dough into walnut-sized balls. Coat each ball in the sugar mixture.
  8. Bake:
    Place coated dough balls 1½ inches apart on prepared baking sheets. Gently press each ball to flatten slightly.
    Bake for 10–15 minutes, or until edges are lightly golden and centers are still soft.
  9. Cool:
    Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
