Steak Frites is a beloved French bistro classic featuring perfectly seared, juicy steak topped with lemon-herb butter and served with golden, crispy double-fried pommes frites. Itβs indulgent, savory, and surprisingly easy to recreate at home.

For the Steak:
- 2 New York Strip Steaks (12 oz each)
- Coarse salt and freshly ground pepper
- 2 tablespoons olive oil (or avocado oil)
- 8β10 sprigs fresh thyme
- 8β10 whole garlic cloves
- 4 tablespoons unsalted butter (for basting)
For the Fries:
- 3 large russet potatoes, cut into batonnet slices
- Coarse salt (to taste)
- Vegetable oil (or olive oil for baking)
For the Lemon-Herb Butter:
- 3 sticks unsalted butter, softened
- 1 tablespoon minced fresh rosemary
- 2 tablespoons minced fresh thyme
- 1/4 cup sliced green onions
- 2 finely minced garlic cloves
- Zest and juice of 1 lemon
- 2 teaspoons coarse salt
- 1/2 teaspoon pepper
Instructions
- Prepare the Herb Butter
In a stand mixer with a paddle attachment, whip the softened butter on high speed for 5β7 minutes until light and fluffy. Add the rosemary, thyme, green onions, garlic, lemon zest, lemon juice, salt, and pepper. Mix until fully combined. Set aside. - Cut and Soak Fries
Slice the russet potatoes into batonnet shapes. Soak them in cold water for at least 30 minutes to remove excess starch. Rinse and drain well. - First Fry
Heat oil to 300Β°F in a deep fryer or heavy pot. Fry potatoes for 3 minutes. Remove and place on a parchment-lined tray. - Cook the Steak
Season steaks with salt and pepper. Heat oil in a skillet over high heat until smoking. Add steaks and press down with tongs or a spatula for 15β20 seconds. Reduce heat to medium. Flip steaks, then add thyme, garlic, and butter. Baste and cook for 2β4 minutes per side. Let steaks rest for 3β4 minutes. - Second Fry
Raise oil temperature to 350Β°F. Fry the par-cooked fries again for 3β5 minutes until golden and crispy. Toss with coarse salt. - Assemble
Slice steak and plate. Top with a generous dollop of lemon-herb butter. Serve with hot fries.
Notes
If you prefer baking the fries, coat them in 2β3 tablespoons of olive oil and bake at 425Β°F for 18β20 minutes. Leftover butter can be stored and used for other dishes. For medium steak, cook 1 minute longer per side.
