- 6ยฝ cups (32ยฝ oz/923 g) strawberries, hulled and chopped
- 2 cups (16 fl oz/480 ml) water
- 2 cups (16 oz/450 g) granulated sugar
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- ยฝ teaspoon citric acid
- Cold seltzer water, for serving
- Vanilla ice cream, for serving
Instructions
- In a large saucepan over medium heat, combine strawberries and water and bring to a boil. Reduce heat to low and simmer for about 15 minutes until the strawberries are very soft.
- Strain the mixture through a fine mesh sieve into another saucepan and discard the solids. Add sugar, lime juice, lemon juice, and citric acid to the liquid.
- Bring to a gentle simmer over medium-low heat and cook for 5 minutes, stirring occasionally. Remove from heat and let the syrup cool to room temperature. Refrigerate for at least 2 hours until cold.
- To make each float, pour 1 part strawberry syrup into a glass and add 2 to 3 parts cold seltzer water. Top with a few scoops of vanilla ice cream. Serve immediately with a straw.
