- 2 lb beef chuck roast, trimmed
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth (low sodium)
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
- 6 to 8 French rolls or hoagie buns
- 6 slices provolone cheese (optional)
- 2 tablespoons butter, softened (for toasting rolls)
Instructions
- Pat the chuck roast dry, season with salt, pepper, thyme, and rosemary.
- Sear the roast in a skillet until browned on both sides.
- Place onion and garlic in slow cooker, place roast on top.
- Pour broth, soy sauce, Worcestershire sauce, and brown sugar over the roast.
- Cook on low for 6-8 hours until beef is fork-tender.
- Remove beef, shred with forks, discard fat.
- Simmer cooking liquid until reduced, return beef to jus.
- Toast buttered rolls, pile with beef, add cheese if desired.
- Serve warm with jus for dipping.
