  • 1 (3–4 lb) corned beef brisket (with pickling spice packet)
  • 1 large onion, peeled
  • 12 garlic cloves
  • 2 bay leaves
  • 1 lb carrots, cleaned and tops trimmed
  • 1 lb baby potatoes, cleaned
  • 1/2 head cabbage, chopped
  • 1 cup low-sodium beef broth
  • 2 cups water or beer (Guinness recommended)
  • 2 tbsp chopped fresh parsley (for serving)

Instructions

  1. Cut the peeled onion into 4 pieces and place them in the slow cooker.
  2. Rinse the corned beef brisket and place it fat-side up in the slow cooker.
  3. Sprinkle the pickling spice packet over the brisket.
  4. Mince 4 garlic cloves and add them around the brisket in the slow cooker.
  5. Pierce the beef with a sharp knife and stuff it with 4 whole garlic cloves.
  6. Add the remaining 4 whole garlic cloves to the slow cooker, then add the bay leaves.
  7. Pour in the beef broth and water (or beer), ensuring the meat is covered by about 1/2 inch of liquid.
  8. Cover and cook on LOW for 8–10 hours, until the meat is tender.
  9. Add the carrots and potatoes after the first 3–4 hours of cooking so they don’t get mushy.
  10. Add the chopped cabbage during the last 2 hours of cooking.
  11. Remove the brisket from the slow cooker and let it rest for 15 minutes. Slice it thinly against the grain. Present the corned beef on a serving platter, surrounded by the cooked vegetables. Garnish with chopped fresh parsley before serving.
