- 1 (3β4 lb) corned beef brisket (with pickling spice packet)
- 1 large onion, peeled
- 12 garlic cloves
- 2 bay leaves
- 1 lb carrots, cleaned and tops trimmed
- 1 lb baby potatoes, cleaned
- 1/2 head cabbage, chopped
- 1 cup low-sodium beef broth
- 2 cups water or beer (Guinness recommended)
- 2 tbsp chopped fresh parsley (for serving)
Instructions
- Cut the peeled onion into 4 pieces and place them in the slow cooker.
- Rinse the corned beef brisket and place it fat-side up in the slow cooker.
- Sprinkle the pickling spice packet over the brisket.
- Mince 4 garlic cloves and add them around the brisket in the slow cooker.
- Pierce the beef with a sharp knife and stuff it with 4 whole garlic cloves.
- Add the remaining 4 whole garlic cloves to the slow cooker, then add the bay leaves.
- Pour in the beef broth and water (or beer), ensuring the meat is covered by about 1/2 inch of liquid.
- Cover and cook on LOW for 8β10 hours, until the meat is tender.
- Add the carrots and potatoes after the first 3β4 hours of cooking so they donβt get mushy.
- Add the chopped cabbage during the last 2 hours of cooking.
- Remove the brisket from the slow cooker and let it rest for 15 minutes. Slice it thinly against the grain. Present the corned beef on a serving platter, surrounded by the cooked vegetables. Garnish with chopped fresh parsley before serving.

- Choose a good quality brisket for the most tender results.
- Resist lifting the lid while cooking to keep the steam in.
- If you prefer your vegetables with more bite, adjust the cooking times accordingly.
