  • 1 lb Carrots, peeled and chopped into 3-inch sticks or about ยฝ bag baby carrots
  • 2โ€“3 lbs baby red Potatoes, halved
  • 2ยฝโ€“3ยฝ lbs Corned Beef Brisket
  • 1 teaspoon ground pepper
  • 1 teaspoon Garlic powder
  • ยฝ teaspoon celery salt
  • 12 oz beer (lager, ale, or stout)
  • 16 oz sauerkraut, drained

Instructions

  1. Rinse the corned beef brisket under cold running water and pat it dry with paper towels.
  2. Place the carrots and potatoes at the bottom of the slow cooker.
  3. Set the corned beef brisket on top of the vegetables, fat side up.
  4. Sprinkle the ground pepper, garlic powder, and celery salt evenly over the brisket.
  5. Pour the beer into the slow cooker, ensuring it covers at least the bottom half of the meat.
  6. Cover and cook on low for 8 to 10 hours or on high for 6 hours.
  7. One hour before finishing, add the drained sauerkraut around the brisket.
  8. Remove the brisket, slice against the grain, and serve with vegetables and sauerkraut.
