- 2 tablespoons fresh parsley, chopped
Instructions
- Spray a 6 to 7 quart slow cooker with nonstick cooking spray.
- Remove corned beef from package, set spice packet aside, and pat dry.
- Place onion quarters at the bottom of the slow cooker and set the corned beef on top, fat side up.
- Sprinkle the spice packet over the meat evenly.
- Add bay leaves and crushed garlic on top of the beef.
- Arrange potatoes and carrots around the corned beef.
- Pour in chicken or beef broth over the vegetables and cover.
- Cook on low for about 6 hours.
- Add cabbage wedges, cover, and continue cooking on low for another 2 to 3 hours.
- Remove the corned beef carefully and let it rest for 10 to 15 minutes before slicing thinly against the grain.
- For the garlic herb butter, combine butter, minced garlic, and parsley in a small bowl.
- Microwave in 20 second intervals on medium power, stirring until fully melted.
- Drizzle or brush the garlic herb butter over the corned beef and vegetables if desired.
- Serve warm with slices of beef, cabbage, carrots, and potatoes. Optional: offer sour cream, horseradish, or whole grain mustard on the side.
Notes
- Use fresh ingredients for the best flavors and textures.
- Trim excess fat from the corned beef for a healthier option.
- If you prefer a stronger flavor, marinate the beef overnight in its spices.
- Season according to preference: adding more or fewer spices can dramatically change the taste.
