  • 1 tbsp curry powder (adjust to taste)
  • 3/4 tsp salt

Sauce & Garnish:

  • 4 green onions, chopped
  • 1/2 cup bean sprouts
  • 2 tbsp chopped cilantro (optional)
  • Lime wedges for serving
  • Chili oil or sriracha (optional, for extra heat)

Instructions

  1. Cook the Protein:

    • Heat oil in a large skillet or wok over medium-high heat.

    • Add chicken, season lightly with salt and pepper, and sauté for 3–4 minutes.

  2. Cook the Noodles:

    • Bring a pot of water to a boil.

    • Cook rice vermicelli according to package instructions (usually 2–3 minutes). Drain and rinse with cold water to stop cooking.

  3. Sauté the Vegetables:

    • In the same skillet, add onion, cabbage, carrots, and bell pepper.

    • Stir-fry for about 5 minutes until just tender.

  4. Add Aromatics & Curry:

    • Add garlic, ginger, curry powder, and salt.

    • Stir for 30 seconds until fragrant.

  5. Add Coconut Milk & Combine:

    • Pour in coconut milk and bring to a simmer.

    • Return cooked chicken and shrimp to the pan.

  6. Mix in Noodles:

    • Add noodles and toss gently until coated and heated through.

    • Stir in green onions, bean sprouts, and cilantro.

  7. Serve:

    • Plate hot and garnish with lime wedges, extra cilantro, and chili oil or sriracha if desired.
