Ingredients

  • 2 medium acorn squash
  • 1 tablespoon olive oil, plus more for brushing onto the squash
  • 1 yellow onion, small dice
  • 1 red bell pepper, small dice
  • 2 stalks celery, small dice
  • Salt and pepper
  • 12 teaspoons chopped fresh thyme (or half a teaspoon dried)
  • 3 cloves garlic, minced
  • 1 lb mild or hot Italian sausage, casings removed
  • 2 cups torn curly kale
  • ¾ cup freshly grated parmesan cheese, divided

Instructions

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. Prepare the acorn squash: cut a small piece off the top and bottom, then split each squash in half width-wise. Remove seeds and brush the inside with olive oil.
  3. Place squash cut side down on the baking sheet and roast for 25 minutes, or until tender.
  4. While the squash is roasting, heat olive oil in a skillet over medium heat. Add onion, bell pepper, and celery, sauté until the onion is translucent. Season with salt and pepper.
  5. Add thyme and garlic, stirring well. Introduce the sausage, breaking it apart as it cooks fully.
  6. Add kale on top, cover the skillet to steam for 1-2 minutes until wilted. Mix in half of the parmesan cheese, remove from heat.
  7. Remove squash from the oven, set the oven to broil. Turn squash cut side up, fill with sausage mixture, and top with remaining cheese.
  8. Broil for 2-3 minutes, watching closely until cheese is melted.
