Main Ingredients:

  • 1 lb Italian sausage (or chicken/kielbasa sausage)
  • 3 cups butternut squash, peeled and cubed
  • 1 apple (Granny Smith, Honeycrisp, or Fuji), diced
  • 1/2 cup broth (chicken, beef, or vegetable)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste

Seasonings:

  • 1 tsp paprika
  • 1/2 tsp dried sage
  • Salt and black pepper, to taste

Garnish:

  • Fresh sage leaves, chopped (optional)

  1. Cook the Sausage: Heat oil in a large skillet over medium heat. Crumble and sautΓ© the Italian sausage until browned.
  2. SautΓ© Aromatics: Add onions, garlic, tomato paste, paprika, salt, and black pepper. Stir well and cook for 2 minutes until fragrant.
  3. Add Squash & Broth: Stir in butternut squash and pour in the broth. Cover and let simmer for 10–12 minutes, until the squash is almost tender.
  4. Incorporate Apples: Stir in the apples and cook for another 3 minutes until all ingredients are soft and flavorful.
  5. Garnish & Serve: Remove from heat, sprinkle with fresh sage, and serve warm.

  • Make It Vegetarian: Use plant-based sausage and vegetable broth.
  • Turn It Into a Stew: Double the broth and add cornstarch to thicken.
