  • 3 tbsp butter
  • 1 ½ lb fresh figs, stems removed + sliced ¼”
  • ½ cup brown sugar
  • Kosher salt, as needed
  • 1 (14 oz) sheet puff pastry, thawed
  • 1 tbsp olive oil
  • ½ cup pistachios, roughly chopped
  • 2 tbsp honey, plus more to drizzle
  • Flaky sea salt, as needed

Instructions

  1. Preheat your oven to 425°F.
  2. In a 12-inch cast-iron skillet, melt butter over medium heat. Add the figs and sauté until they start to soften.
  3. Stir in brown sugar and a pinch of salt, allowing the sugar to melt and create a caramel-like syrup.
  4. Roll out puff pastry on a lightly floured surface and trim into a circle about 10 inches in diameter. Place over caramelized figs in the skillet, tucking in the edges.
  5. Transfer skillet to oven and bake for about 20 minutes, until pastry is puffed and golden.
  6. While the tarte bakes, heat a small skillet over medium heat. Add olive oil and pistachios, toasting briefly. Stir in honey and a pinch of salt.
  7. Remove tarte from oven. Use a large cutting board over the skillet to flip the tarte upside down.
  8. Top with honeyed pistachios and a sprinkle of flaky sea salt. Serve warm with a drizzle of honey.
