- 3 tbsp butter
- 1 ½ lb fresh figs, stems removed + sliced ¼”
- ½ cup brown sugar
- Kosher salt, as needed
- 1 (14 oz) sheet puff pastry, thawed
- 1 tbsp olive oil
- ½ cup pistachios, roughly chopped
- 2 tbsp honey, plus more to drizzle
- Flaky sea salt, as needed
Instructions
- Preheat your oven to 425°F.
- In a 12-inch cast-iron skillet, melt butter over medium heat. Add the figs and sauté until they start to soften.
- Stir in brown sugar and a pinch of salt, allowing the sugar to melt and create a caramel-like syrup.
- Roll out puff pastry on a lightly floured surface and trim into a circle about 10 inches in diameter. Place over caramelized figs in the skillet, tucking in the edges.
- Transfer skillet to oven and bake for about 20 minutes, until pastry is puffed and golden.
- While the tarte bakes, heat a small skillet over medium heat. Add olive oil and pistachios, toasting briefly. Stir in honey and a pinch of salt.
- Remove tarte from oven. Use a large cutting board over the skillet to flip the tarte upside down.
- Top with honeyed pistachios and a sprinkle of flaky sea salt. Serve warm with a drizzle of honey.
