- 1 (3 oz.) package strawberry gelatin
- Β½ cup sugar (for rhubarb mixture)
Instructions
- Preheat oven to 350Β°F and prepare a 9Γ13 pan with cooking spray.
- Slices rhubarb into 1-inch pieces, mix with Β½ cup sugar and strawberry gelatin, set aside.
- Combine all-purpose flour, brown sugar, and butter until crumbly. Stir in pecans. Reserve 1 cup for topping. Press remainder into the pan. Bake 8-10 minutes, then cool.
- Beat cream cheese until fluffy, mix in sugar, eggs, and vanilla until smooth. Spread over cooled crust.
- Top evenly with rhubarb mixture; sprinkle reserved crumble mix on top.
- Bake for 40-45 minutes until edges brown and center jiggles slightly. Cool before refrigerating.
- Chill, slice, and serve with whipped cream or ice cream.
