  • For the cinnamon sugar coating:

  • ½ tablespoon ground cinnamon

Instructions

  1. Preheat oven to 375°F and grease the mini muffin tins.
  2. In a medium bowl, combine flour, sugar, brown sugar, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, whisk together eggs, pumpkin puree, and melted butter.
  4. Gently stir dry ingredients into the wet mixture until just combined.
  5. Fill each muffin cavity about three-quarters full.
  6. Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool for a few minutes before transferring to a cooling rack.
  8. Mix sugar and cinnamon in a small bowl for the coating.
  9. Roll warm muffins in the cinnamon sugar mixture. If needed, mist muffins with cooking spray to help the coating stick.
