- 1 pound boneless, skinless chicken breasts (about four 4-ounce breasts)
- Salt and fresh ground pepper, to taste
- Β½ cup low sugar honey barbecue sauce, divided
- 1 can (20 ounces) pineapple chunks, drained
- Β½ tablespoon olive oil
Instructions
- Preheat the oven to 400Β°F.
- Grease a baking dish with cooking spray.
- Season the chicken breasts with salt and pepper.
- Place the chicken breasts in the baking dish. Pour β of the barbecue sauce over the chicken and rub it in.
- Top the chicken with the pineapple chunks and pour the remaining barbecue sauce on top.
- Cover the dish with plastic wrap and refrigerate for 30 minutes to 2 hours for enhanced flavor.
- Remove the plastic wrap and drizzle olive oil over the chicken.
- Bake uncovered for 32 to 35 minutes, or until the chicken reaches an internal temperature of 165Β°F.
- Let the chicken rest for 5 minutes before serving.
Notes
- Use fresh pineapple if available for extra flavor. Canned works too, but fresh gives a more vibrant taste.
- Let the chicken marinate longer if time allows. This deepens the flavor.
- Donβt rush resting time: Letting the chicken sit after baking helps keep it juicy.
