Ingredients

  • 1 pound boneless, skinless chicken breasts (about four 4-ounce breasts)
  • Salt and fresh ground pepper, to taste
  • Β½ cup low sugar honey barbecue sauce, divided
  • 1 can (20 ounces) pineapple chunks, drained
  • Β½ tablespoon olive oil

Instructions

  1. Preheat the oven to 400Β°F.
  2. Grease a baking dish with cooking spray.
  3. Season the chicken breasts with salt and pepper.
  4. Place the chicken breasts in the baking dish. Pour β…“ of the barbecue sauce over the chicken and rub it in.
  5. Top the chicken with the pineapple chunks and pour the remaining barbecue sauce on top.
  6. Cover the dish with plastic wrap and refrigerate for 30 minutes to 2 hours for enhanced flavor.
  7. Remove the plastic wrap and drizzle olive oil over the chicken.
  8. Bake uncovered for 32 to 35 minutes, or until the chicken reaches an internal temperature of 165Β°F.

  • Use fresh pineapple if available for extra flavor. Canned works too, but fresh gives a more vibrant taste.
  • Let the chicken marinate longer if time allows. This deepens the flavor.
