- 18 bell peppers (use all colors)

Instructions
- Finely chop the pears, bell peppers, onions, and hot peppers.
- Place all chopped ingredients in a large pot. Add sugar, salt, and vinegar to the pot, stirring everything until well combined.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Simmer until all ingredients are tender and flavors have melded together, approximately 30 minutes.
- Carefully ladle the hot pear relish into clean, heated canning jars, leaving a half-inch of headspace. Clean rims, place lids and rings on jars, and tighten.
- Process jars in a hot water bath for 10 minutes for a proper seal. Remove using the jar lifter, let cool completely on a clean towel. Store in a cool, dark place once cooled.
