  • 18 bell peppers (use all colors)
  • 3 cups sugar

  • 3 pints vinegar
  • 5 large onions (mix white and red)
  • Green hot pepper
  • Red hot pepper

Instructions

  1. Finely chop the pears, bell peppers, onions, and hot peppers.
  2. Place all chopped ingredients in a large pot. Add sugar, salt, and vinegar to the pot, stirring everything until well combined.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally. Simmer until all ingredients are tender and flavors have melded together, approximately 30 minutes.
  4. Carefully ladle the hot pear relish into clean, heated canning jars, leaving a half-inch of headspace. Clean rims, place lids and rings on jars, and tighten.
  5. Process jars in a hot water bath for 10 minutes for a proper seal. Remove using the jar lifter, let cool completely on a clean towel. Store in a cool, dark place once cooled.
