Ingredients

Scale
  • 8–9 small (5–6 large) pears, peeled, cored, and thinly sliced (about 5 cups)
  • Β½ cup (100 g) granulated sugar
  • ΒΌ cup (50 g) light brown sugar, packed
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ΒΌ teaspoon ground nutmeg
  • ΒΌ teaspoon kosher salt
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium-sized mixing bowl, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt.
  2. Add sliced pears to the bowl and gently toss to coat them thoroughly.
  3. Transfer the pears to a medium saucepan over medium heat. Cook while stirring occasionally until the liquid thickens, about 5-7 minutes.
  4. Remove from heat and stir in lemon juice and vanilla extract. Let the filling cool completely before using.
  5. Preheat oven to 375Β°F when ready to bake. Pour chilled pear pie filling into a 9-inch pie crust.

  7. Bake for 50-55 minutes until crust is golden brown and filling is bubbly. Cool completely before serving.

Notes

  • Select ripe, but firm pears for the best texture.
  • Toss sliced pears with lemon juice to prevent browning.
