Ingredients
- Chocolate chips (milk, semi-sweet, or dark) β 2 β cups
- Shortening β 2 teaspoons
- Powdered sugar β 1 ΒΎ cups
- Peanut butter β 1 cup creamy
- Salted butter, room temperature (or unsalted butter + β tsp salt) β ΒΌ cup
- Vanilla extract β 1 Β½ teaspoons
- Salt β 1 teaspoon
Instructions
- Line a mini muffin pan with paper liners and set aside.
- Melt half of the chocolate chips with 1 teaspoon of shortening in the microwave, stirring every 30 seconds until smooth.
- Spoon a teaspoon of melted chocolate into each liner, pushing it slightly up the sides. Chill briefly.
- Combine the powdered sugar, peanut butter, butter, vanilla extract, and salt until smooth.
- Melt the remaining chocolate as before.
- Add a scoop of peanut butter mixture into each chocolate-lined cup, leaving space at the top.
- Cover with more melted chocolate and smooth the top.
- Let the cups set at room temperature, or chill them for 10 minutes in the fridge until firm.
- Remove them from the liners to serve.

- Use natural peanut butter for a more authentic and creamy filling.
- For a shiny chocolate coating, consider tempering the chocolate.
