Peanut Butter Chicken

Description

This Peanut Butter Chicken recipe is a creamy, savory delight with a rich, nutty sauce that perfectly complements tender, juicy chicken. It’s quick, easy, and bursting with flavor, making it the ideal meal for busy nights or family gatherings. Serve it over rice, noodles, or alongside vegetables for a complete dish.

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs for more flavor)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Peanut Butter Sauce:

  • Β½ cup peanut butter (smooth or crunchy)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, grated
  • Β½ teaspoon red pepper flakes (optional)
  • Β½ cup coconut milk or chicken broth (for a thinner sauce)

For Garnish (Optional):

  • Chopped peanuts
  • Fresh cilantro or green onions
  • Lime wedges

Instructions

  • Season the Chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
  • Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-7 minutes per side, until fully cooked and golden brown.
  • Set Aside: Remove the chicken from the pan and let it rest while you prepare the sauce.
  • Prepare the Sauce: In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, red pepper flakes, and coconut milk until smooth.
  • Cook the Sauce: Pour the sauce into the same skillet over medium-low heat. Stir occasionally and cook for 2-3 minutes until smooth and warmed through.
  • Combine Chicken and Sauce: Slice or cube the cooked chicken and return it to the skillet. Stir to coat the chicken evenly with the sauce. Let it cook for another 2-3 minutes.
  • Serve: Plate the chicken with your preferred side and garnish with chopped peanuts, fresh cilantro, or lime wedges.

Notes

  • Use Chicken Thighs for Extra Juiciness: They’re more flavorful and absorb the sauce better.
  • Adjust the Spice Level: If you love heat, add more red pepper flakes or sriracha.
  • Make It Vegetarian: Swap the chicken for tofu or chickpeas.
  • For a Thicker Sauce: Reduce the amount of coconut milk or broth slightly.
  • Serving Suggestions: This dish pairs beautifully with steamed rice, noodles, or fresh vegetables for a well-rounded meal.
