Instructions
Step 1: Preparation
-
Gather all ingredients before starting for a smooth cooking process.
Step 2: Cleaning the Fish
-
Remove any scales from the tilapia using a kitchen knife.
-
Rinse under cold water with lemon or lime juice and pat dry with a paper towel.
-
Make four deep diagonal cuts on both sides of the fish for better marinade absorption.
Step 3: Marinating the Tilapia
-
Blend scallions, bell peppers, celery, ginger, curry powder, onion, garlic, olive oil, and chicken bouillon into a smooth paste.
-
Set aside 2 tbsp of the marinade and mix it with 1 tsp of olive oil (for brushing during grilling).
-
Rub the marinade generously onto the fish, ensuring it seeps into the cuts.
-
Season with salt and black pepper.
-
Allow the fish to marinate for at least 30 minutes (or overnight for maximum flavor).
Step 4: Grilling the Tilapia in the Oven
-
Move the oven rack to the second-highest position.
-
Preheat the oven and set it to broil on high.
-
Lightly brush olive oil onto a grill baking pan.
-
Place the marinated fish onto the pan and broil for 15 minutes per side.
-
Halfway through, brush with the reserved marinade for extra flavor.
Step 5: Preparing the Fried Plantains
-
Peel the ripe plantains and slice them diagonally.
-
Heat oil in a skillet over medium-high heat.
-
Fry plantains until golden brown on each side.
-
Remove from oil and place on a paper towel to absorb excess oil.
Step 6: Sauteing the Vegetables
-
Chop onions, bell peppers, and tomatoes.
-
Heat 2 tbsp of olive oil in a skillet over medium-high heat.
-
Saute the vegetables until slightly soft.
-
Add chicken bouillon to taste.
Notes
- Choose fresh ingredients for the best flavor.
- Marinate properly to enhance taste and tenderness.
- Use high heat for a crispy exterior.
- Don’t overcrowd the pan when frying plantains to ensure even cooking.
