Description

  • 4 lb chicken wings (wingettes and drumettes)
  • 5 tsp baking powder (not baking soda)
  • 3/4 tsp kosher salt
  • 4 tbsp unsalted butter, melted
  • 1/2 cup Frank’s Red Hot Sauce
  • 1 tbsp brown sugar
  • 1/4 tsp kosher salt (for the sauce)
  • Optional: Celery sticks
  • Optional: Blue cheese dip

Instructions

  1. Preheat the oven to 250°F (120°C) and position racks in the lower and upper thirds of the oven.
  2. Line a rimmed baking sheet with foil and place a wire rack on top. Spray the rack with oil.
  3. Toss the chicken wings with baking powder and salt to coat evenly.
  4. Place the wings on the wire rack, skin side up, and bake for 30 minutes on the lower rack.
  5. Increase the oven temperature to 425°F (220°C) and move the tray to the upper rack. Bake for an additional 40–50 minutes, rotating the tray halfway through, until wings are crispy and golden brown.
  6. In a small saucepan, combine the melted butter, hot sauce, brown sugar, and salt. Stir until the sugar dissolves and the sauce is warm.
  7. Remove the wings from the oven and toss them in the buffalo sauce until well coated.
  8. Serve the wings immediately with celery sticks and blue cheese dip, if desired.

Notes

  • For extra crispiness, let the wings dry in the fridge overnight before baking.
  • Use a wire rack to allow air to circulate around the wings for even crisping.
  • Feel free to adjust the heat level of the buffalo sauce by adding more or less hot sauce.
