- 2 pounds red potatoes, about 6โ8 potatoes
- 6 ounces bacon, coarsely chopped
- 1 cup sweet onion, finely chopped
- 3 garlic cloves, finely minced
- 3/4 cup chicken broth
- 1/4 cup distilled white vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Flat-leaf parsley and chives, finely chopped (optional)
Instructions
- Add red potatoes to a large pot and cover with water. Boil for 15โ20 minutes until fork-tender. Drain, let cool, then peel and chop into 1/2-inch chunks.
- Cook bacon in a skillet over medium heat for 7-8 minutes until crispy. Remove bacon, leaving drippings in the pan.
- Add onion to the skillet, cooking for 2-3 minutes until soft. Stir in garlic and cook for 30 seconds.
- Pour in chicken broth and vinegar, whisk in mustard, sugar, salt, and pepper. Bring to a boil, then simmer for 5 minutes until slightly reduced.
- Add cooked potatoes and olive oil to the skillet, tossing gently to coat with dressing.
- Transfer salad to a serving dish, sprinkle with bacon, and garnish with parsley or chives if desired.
- Serve warm or chilled.
Notes
- For a stronger flavor, allow the salad to rest for an hour after mixing.
- Customize with chopped dill pickles, celery, or radishes.
