The Old-Fashioned German Potato Salad brings families together with its comforting vinegar-based flavors, crispy bacon, and tender potatoes.


Ingredients

  • 2 pounds red potatoes, about 6โ€“8 potatoes
  • 6 ounces bacon, coarsely chopped
  • 1 cup sweet onion, finely chopped
  • 3 garlic cloves, finely minced
  • 3/4 cup chicken broth
  • 1/4 cup distilled white vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Flat-leaf parsley and chives, finely chopped (optional)

Instructions

  1. Add red potatoes to a large pot and cover with water. Boil for 15โ€“20 minutes until fork-tender. Drain, let cool, then peel and chop into 1/2-inch chunks.
  2. Cook bacon in a skillet over medium heat for 7-8 minutes until crispy. Remove bacon, leaving drippings in the pan.
  3. Add onion to the skillet, cooking for 2-3 minutes until soft. Stir in garlic and cook for 30 seconds.
  4. Pour in chicken broth and vinegar, whisk in mustard, sugar, salt, and pepper. Bring to a boil, then simmer for 5 minutes until slightly reduced.
  5. Add cooked potatoes and olive oil to the skillet, tossing gently to coat with dressing.
  6. Transfer salad to a serving dish, sprinkle with bacon, and garnish with parsley or chives if desired.
  7. Serve warm or chilled.

  • For a stronger flavor, allow the salad to rest for an hour after mixing.
