Ingredients
Scale
- 15.25 oz red velvet cake mix
- 8 oz full-fat cream cheese, softened
- 20 oz vanilla melting wafers
- ยฝ cup red candy melts (optional, for drizzling)
- Sprinkles (optional)
Instructions
- Preheat the oven to 350ยฐF. Line a baking sheet with parchment paper and spread the dry cake mix evenly. Bake for 5 minutes or until it reaches 165ยฐF to heat treat. Let cool completely.
- Whip the softened cream cheese in a medium bowl with a hand mixer until smooth, 1โ2 minutes. Add the cooled cake mix to the cream cheese and beat again until fully combined.
- Cover the bowl and refrigerate for 2 hours or freeze for 20โ30 minutes if short on time.
- Line two baking sheets with parchment paper. Use a cookie scoop to portion the dough, roll into balls, and place on the baking sheets. Let sit at room temperature for 15 minutes.
- Melt the vanilla melting wafers using a double boiler or microwave, then dip each cake ball into the melted chocolate and place back onto the baking sheet.
- While the coating is still wet, immediately add sprinkles. If using candy melts for decoration, melt them and drizzle on once the coating has set. Let harden before serving.
Notes
- Keep ingredients chilled for easier formation of balls.
- Use quality chocolate for a smooth, shiny coating.
