Instructions

  1. Preheat oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flours, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a medium bowl, whisk brown sugar, maple syrup, oil, pumpkin purée, eggs, and buttermilk until smooth.
  4. Pour wet ingredients into dry ingredients and fold until just combined. Avoid overmixing.
  5. Let batter rest at room temperature for 15–30 minutes.
  6. Divide batter evenly among muffin cups and top with cinnamon sugar if desired.
  7. Bake for 7–8 minutes, reduce oven temperature to 350°F (175°C), and continue baking for 10–12 minutes.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
