- 3 tablespoons tomato paste
- 6 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 pinch red pepper flakes (optional)
- 8 ounces dried medium pasta shells (about 2 3/4 cups)
- 5 ounces baby spinach (about 5 packed cups)
- 3/4 cup heavy cream
- 1/2 ounce grated Parmesan cheese (about 1/4 cup), plus more for serving
Instructions
- Begin by cutting the chicken into bite-sized pieces and seasoning them with one teaspoon of kosher salt.
- Melt the butter in a large pot over medium-high heat. Add the chicken in batches and cook until golden, approximately 4-6 minutes per batch. Transfer to a plate.
- Reduce the heat to medium. Add the diced onion, minced garlic, black pepper, and remaining salt. Cook until the onion is softened, about 3-4 minutes.
- Stir in the sun-dried tomatoes and tomato paste. Cook for 2-3 minutes until the paste darkens slightly.
- Pour in the chicken broth, thyme, and red pepper flakes. Bring to a boil. Add the pasta shells and simmer, stirring occasionally, until al dente, about 10-12 minutes.
- Return the chicken to the pot. Add spinach, heavy cream, and Parmesan cheese. Stir until the spinach wilts and everything is heated through, about 2 minutes.
- Serve hot with extra grated Parmesan on top, if desired.
