Ingredients
Scale
- 2 cups 100% Pure Maple Syrup
- 1 cup 35% Cream
- 3 tbsp unsalted Butter
Instructions
- Line a loaf pan with parchment paper, allowing the parchment to hang over the edges for easier removal later.
- In a large pot, bring the pure maple syrup to a boil over medium heat, and let it simmer for 5 minutes. Be cautious as the syrup may rise to the potβs top during boiling.
- After 5 minutes, pour in the 35% cream without stirring, returning the mixture to a boil. Simmer until it reaches 236 degrees Fahrenheit on the candy thermometer, approximately 30 minutes. Stay close to prevent rising or burning syrup.
- Once the temperature is reached, remove the pot from heat and add butter, but do not stir it in. Let the mixture cool for about 8 minutes. If transferring to a bowl, do so carefully to avoid damage or scalding and beat the mixture with an electric mixer on medium speed for 5 minutes until it thickens and loses its sheen.
- Immediately transfer the fudge mix to the prepared loaf pan, spreading it to the edges. Refrigerate until completely set, for at least 3 hours. Once set, lift the fudge out using parchment paper and cut into small squares.
Notes
- Ensure youβre precise with the temperature, using a reliable candy thermometer.
- Utilize high-quality ingredients, especially the maple syrup, for the best flavor outcome.
- Add your favorite nuts for a crunchy texture or a sprinkle of sea salt for a sweet and salty combination.
