Ingredients
Scale
For the Casserole:
- 3 cups cooked chicken breast (shredded or chopped)
- 6 slices Swiss cheese
- 8 oz cream cheese
- 1 cup chicken broth
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
For the Topping:
- 2 cups pork rind crumbs (or almond flour as an alternative)
- 1 cup grated Parmesan cheese
- ¼ cup melted butter
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish with butter.
- Prepare the Creamy Sauce: In a medium saucepan over medium heat, whisk together cream cheese, chicken broth, onion powder, garlic powder, salt, and pepper until smooth and creamy. Remove from heat.
- Assemble the Casserole: Spread the shredded chicken evenly in the casserole dish. Pour the creamy sauce over the chicken and lay Swiss cheese slices on top.
- Prepare the Topping: In a bowl, mix pork rind crumbs, Parmesan cheese, and melted butter. Sprinkle the mixture evenly over the casserole.
- Bake: Place the casserole in the oven and bake for 30 minutes, or until the top is golden brown and crispy.
- Rest & Serve: Let it cool for 5 minutes before serving. Enjoy!
Notes
- Use Rotisserie Chicken: Saves time and adds extra flavor.
- Let It Rest: Allowing the casserole to sit for a few minutes helps flavors meld.
- Swap Cheese: If Swiss cheese is too strong, try mozzarella or provolone for a milder taste.
- Make It Ahead: Assemble and refrigerate for up to 24 hours before baking.
