Lemon Glaze (Optional):
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat oven to 400Β°F (200Β°C). Lightly grease or line a 12-cup muffin tin with liners.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mix wet ingredients: In a large bowl, whisk the Greek yogurt, eggs, sugar, melted butter, milk, lemon juice, zest, and vanilla extract until well combined.
- Combine: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
- Fold in poppy seeds to distribute them evenly throughout the batter.
- Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ΒΎ full.
- Bake: Transfer the muffin tin to the preheated oven and bake for 17-22 minutes, or until the tops spring back when touched and a toothpick inserted in the center comes out clean.
