For the Cookies

  • 2 sticks (226g) unsalted butter, softened
  • 1 Β½ cups (298g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 2 ΒΎ cups (330g) all-purpose flour
  • Β½ teaspoon baking soda
  • Β½ teaspoon baking powder
  • ΒΎ teaspoon salt
  • 2 teaspoons dried lavender

For the Lemon Glaze

  • Β½ cup (57g) powdered sugar
  • 1 tablespoon lemon juice
  • 1–2 teaspoons heavy cream (adjust for consistency)

Instructions

  1. Make the Dough:
    In a stand mixer or with a hand mixer, cream together softened butter and sugar until light and fluffy (about 3 minutes). Add eggs, vanilla, lemon zest, and lemon juice. Mix until well combined.
  2. Combine Dry Ingredients:
    In a separate bowl, whisk together flour, baking soda, baking powder, salt, and dried lavender.
  3. Finish the Dough:
    Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  4. Chill the Dough:
    Cover and refrigerate the dough for at least 30 minutes to prevent excessive spreading.
  5. Bake the Cookies:
    Preheat the oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper. Scoop 1 to 1 Β½ tablespoons of dough per cookie and place 3 inches apart. Bake for 10–12 minutes, until the edges are golden. Let cool completely on the baking sheet.
  6. Make the Lemon Glaze:
    In a small bowl, whisk together powdered sugar, lemon juice, and heavy cream until smooth. Add more cream for a thinner consistency if desired.
  7. Glaze the Cookies:
    Drizzle the glaze over cooled cookies using a spoon or fork. Let the glaze set before serving.

Notes

For a stronger lavender flavor, pulse dried lavender with sugar in a food processor before baking. You can also use 1 teaspoon of fresh lavender in place of 2 teaspoons dried just be sure to chop it finely. These cookies freeze well; freeze the dough balls or baked cookies (unglazed) for up to 3 months.
