Ingredients

Scale

For the Broth:

  • 8 cups vegetable broth
  • 1 onion, peeled and quartered
  • 1/4 inch ginger
  • 2 carrots, peeled
  • 4 sticks celery, sliced in half
  • 6 cloves garlic
  • 1 teaspoon salt

For the Soup Base:

  • 1 1/2 cups dry pastina (or other small pasta)
  • Fresh parsley, for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Broth: In a large soup pot, bring the vegetable broth to a boil.
  2. Simmer the Vegetables: Add onion, ginger, carrots, celery, garlic, and salt. Reduce heat and let simmer for 25 minutes until vegetables are tender.
  3. Cook the Pasta: In a separate pot, cook pastina according to package instructions. Drain and set aside.
  4. Blend the Vegetables: Using a slotted spoon, transfer cooked vegetables to a blender along with 2 cups of broth. Blend until smooth.
  5. Combine the Soup: Pour the blended vegetable mixture back into the pot and stir well to create a rich, flavorful broth.
  6. Serve: Place cooked pastina in serving bowls, ladle the hot soup over it, and garnish with fresh parsley and black pepper.

Notes

  • Customize the Flavor: Add turmeric or red pepper flakes for an extra warming boost.
  • Make it Creamier: Blend cashews or coconut milk into the broth.
