Then, remove the peaches and immerse them in a large bowl of cold water to stop them from cooking further. Once cool, peel the skins off the peaches and cut them in half.
  2. In a medium microwave-safe bowl, combine the glutinous rice flour and sugar. Whisk in the water until smooth. Cover the bowl with a wet paper towel and microwave the mixture for 1 minute. Stir and repeat twice more, until the mochi is thick and sticky. Allow the mochi to cool for 5-10 minutes before proceeding to the next step.
  3. Dust your work surface with cornstarch. Place the mochi on the surface, dusting it with more cornstarch. Roll out the dough into a circle about ⅙-inch thick and use a pastry brush to remove excess starch. Divide the mochi into four portions. For each piece, place a half peach at the center. Pull the sides of the mochi over the peach to enclose it completely. Once done, dust the mochi with additional cornstarch and remove any excess using a pastry brush. Place each mochi seam-side down.
