For the Glaze:
- 1/4 cup teriyaki sauce
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes (optional)
For Serving:
- 1 cup cooked rice
- Chopped fresh cilantro, for garnish
- Sesame seeds, for garnish
Instructions
- Preheat the Oven: Set your oven to 400Β°F (200Β°C) for even roasting.
- Marinate the Chicken: In a bowl, combine teriyaki sauce, honey, soy sauce, rice vinegar, and red pepper flakes. Add the sliced chicken and let it marinate for at least 15 minutes.
- Prepare the Vegetables: Chop the bell peppers, red onion, and pineapple into bite-sized pieces for even cooking.
- Arrange on Sheet Pan: Place the marinated chicken in the center of a rimmed baking sheet. Scatter the chopped vegetables and pineapple around the chicken. Drizzle with olive oil and season with garlic powder, salt, and pepper.
- Bake: Roast in the oven for 25-30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165Β°F (75Β°C).
