Ingredients

Scale

For the Cake:

  • 3 large eggs
  • 1 cup high-protein Greek yogurt (plain or vanilla)
  • 12 tablespoons sweetener (maple syrup, honey, or sugar substitute)
  • ¼ cup all-purpose flour (substitute with almond flour for gluten-free)
  • 1 ½ teaspoons vanilla extract
  • 3 tablespoons cornstarch
  • ½ teaspoon baking soda
  • ½1 scoop protein powder (optional, vanilla or unflavored)

Optional Toppings:

  • Fresh berries
  • Light dusting of powdered sugar
  • Cinnamon
  • Sugar-free chocolate syrup
  • Chopped nuts or dark chocolate chips

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (176°C). Line a cake pan, bread pan, or muffin tin with parchment paper or spray with non-stick spray.
  2. Mix Wet Ingredients:
In a mixing bowl, whisk together the eggs, Greek yogurt, and sweetener until smooth.
  3. Add Dry Ingredients:
Stir in the flour, cornstarch, vanilla extract, and baking soda. If using protein powder, add it now and mix until the batter is smooth and lump-free.
  4. Blend (Optional):
For a smoother texture, process the batter in a blender or food processor.
  5. Pour and Bake:
Pour the batter into your prepared pan.
  6. Bread Pan: Bake for 25 minutes
  7. 6” Cake Pan: Bake for 30–35 minutes
  8. Muffin Pan: Bake for 10–15 minutes
Use a toothpick to check for doneness—it should come out clean.
  9. Cool and Serve:
Let the cake cool completely before slicing. Top with berries, a sprinkle of cinnamon, or a drizzle of sugar-free syrup for extra flavor.

Notes

  • Choose high-quality Greek yogurt for the best flavor and texture—thick and creamy varieties work best.
  • Adjust sweetness to your liking and taste the batter before baking.
  • Add chopped nuts or chocolate chips for a boost in flavor and crunch.
  • Pairs well with Breakfast Oatmeal Cupcakes or Fluffy Pancakes for a wholesome brunch lineup.
