Ingredients

  • 2 tbsp butter
  • 2 tbsp grape jelly
  • 9 egg whites
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 cup sugar
  • Zest of 1 small orange or clementine
  • 1/2 cup flour
  • Icing sugar for sprinkling

Instructions

  1. Spread butter and grape jelly on the bottom of a glass baking dish. Preheat oven to 400°F (200°C).
  2. Use an electric mixer to beat the egg whites, 1/2 cup sugar, and orange zest until stiff peaks form.
  3. In a separate bowl, mix egg yolks with 1/4 cup sugar and flour. Gently fold into egg white mixture.
  4. Spoon the mixture over the jelly in the baking dish, forming peaks.
  5. Bake for 10 minutes until golden. Turn off oven and leave soufflé inside to set for 5 to 20 minutes.
  6. Dust with icing sugar before serving with grape sauce underneath.
