  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup buttermilk or regular milk
  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups black seedless grapes, sliced or quartered
  • Sparkling sugar for topping (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line muffin tin with paper liners.
  2. In a large mixing bowl, combine melted butter, sugar, and vanilla.
  3. Add eggs and stir until smooth. Gradually pour in the milk, stirring continuously.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt.
  5. Fold half of the dry mix into the wet mixture gently.
  6. Fold in remaining dry ingredients without overmixing.
  7. Gently fold grape pieces into the batter.
  8. Scoop batter into muffin cups, sprinkle with sparkling sugar if desired.
  9. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for 20–25 more minutes.
  10. Check doneness with a toothpick, cool for 10 minutes in the pan, then transfer to a wire rack.
