- 2 flour tortillas
- 2 eggs
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Salt and pepper to taste
- Optional: Salsa, guacamole, sour cream, or queso for serving
Instructions
- Heat a non-stick or cast iron skillet over medium heat.
- Crack two eggs into the skillet and season with salt and pepper.
- Cook eggs for 2β3 minutes, flip if desired, then remove from pan.
- Place one tortilla in the skillet and sprinkle cheese evenly.
- Place the cooked eggs on top and add more cheese.
- Top with the second tortilla, press gently.
- Cook until the bottom tortilla is golden brown, then flip.
- Cook the other side until cheese melts completely.
- Remove, slice, and serve with your choice of dips.
