  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (96 g) unsweetened cocoa powder
  • 1 teaspoon espresso powder (optional)
  • 1 cup (240 ml) boiling water
  • ½ cup (120 g) full-fat sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (226 g / 2 sticks) unsalted butter, room temperature
  • 1 ½ cups (300 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 cups (240 g) confectioners’ sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two muffin tins with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, whisk cocoa powder and espresso powder together, add boiling water, and whisk until smooth. Allow to cool before mixing in sour cream and vanilla extract.
  4. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each.
  5. Add one-third of the flour mixture and mix on low speed until combined. Add half of the chocolate mixture, mix, and repeat, ending with the final third of the flour mixture. Scrape bowl to ensure everything is combined.
  6. Fill cupcake liners about two-thirds full and bake for 18–22 minutes. Let cool in pan for 5 minutes before transferring to a wire rack.
  7. For frosting, beat butter until light and creamy. Gradually mix in confectioners’ sugar, then add vanilla extract and milk.
  8. Set aside ½ cup of vanilla frosting. Mix cocoa into remaining frosting, adding milk if necessary. Use piping bag to pipe chocolate frosting, creating a football shape, and vanilla frosting for laces.
