Description
Filet O Fish Burgers are a crispy, golden takeout classic made at home with flaky cod fillets, tartar sauce, and melty cheese in a steamed bun.

- 4 (4 oz) skinless cod fillets
- 2 cups panko breadcrumbs
- 1 large egg
- 1 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 Tbsp cornstarch
- 1 Tbsp all-purpose flour
- 1/4 tsp paprika
- 1 tsp kosher salt, divided
- 4 brioche hamburger buns
- 4 slices American cheese
- McDonald’s-style tartar sauce (about 8 Tbsp total)
- Canola oil, for frying
- Water, for steaming buns
Instructions
- Pour canola oil into a Dutch oven to a depth of 2 inches and heat to 360°F (182°C). Preheat oven to 200°F (93°C).
- Pat cod fillets dry and season with 1/2 tsp kosher salt.
- In a bowl, whisk egg, mayonnaise, Dijon mustard, cornstarch, flour, paprika, and remaining 1/2 tsp salt.
- Place panko breadcrumbs in a separate bowl. Dip fillets into the egg mixture, then into panko to coat evenly.
- Fry 2 fillets at a time until golden and crispy, 3–5 minutes. Transfer to a wire rack over a baking sheet and keep warm in the oven. Repeat with remaining fillets.
- Place bottom buns with cheese slices on a microwave-safe plate with a damp paper towel. Cover with an inverted bowl and microwave for 15–20 seconds to steam and melt cheese. Microwave top buns separately for 10–15 seconds.
- Assemble the burgers: place a crispy fish fillet on each cheesy bottom bun, top with 2 Tbsp tartar sauce, then the top bun.
Notes
- Make sure the fish is dry before breading for better crispiness.
- Don’t overcrowd the oil while frying.
- Steaming the buns gives the burgers their signature texture.
- Optional additions: lettuce, pickles, or extra tartar sauce.
