- 2 lbs Russet or Yukon Gold potatoes
- 3 cups vegetable or canola oil (for frying)
- 1β2 tablespoons sea salt (or seasoning of choice)
Instructions
- Peel the potatoes and slice them thinly using a mandoline (1/16β1/8 inch thickness).
- Place the slices in a bowl of ice water and let soak for 30 minutes to remove starch.
- Rinse the soaked slices, lay them out on a towel, and pat them completely dry.
- Heat the oil in a deep skillet to 350β365Β°F. Test with a bread cube it should brown in 50β60 seconds.
- Fry the potato slices in batches for 3β4 minutes, stirring frequently to prevent sticking.
- Use a slotted spoon to remove chips from the oil and place them on a paper towel-lined plate.
- Sprinkle immediately with salt or seasoning of choice.
- Let chips cool in a single layer to retain their crispiness before serving or storing.

- Use a mandoline for consistent, paper-thin slices that fry evenly.
- Donβt skip the soak it removes starch and helps chips crisp up.
