  • 100g granulated sugar
  • 100g almond flour
  • 100g powdered sugar
  • Pinch of salt
  • Food coloring (optional)

For the Buttercream Filling:

  • 6 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Making the Macaron Batter:

  1. Sift almond flour and powdered sugar together three times to remove clumps.

  2. Heat egg whites and granulated sugar over a double boiler, whisking until frothy and sugar dissolves.

  3. Transfer to a stand mixer and whisk on high speed until stiff, glossy peaks form.

  4. Gently fold in the sifted dry ingredients using a spatula. The batter should flow like lava when lifted.

  5. Transfer the batter into a piping bag and pipe small circles onto a parchment-lined baking sheet.

Resting & Baking the Macarons:

  1. Let macarons rest for 30 minutes until a skin forms.

  2. Preheat oven to 300ยฐF (150ยฐC).

  3. Bake for 13-15 minutes until firm with feet forming at the bottom.

  4. Let cool completely before filling.

Making the Buttercream & Assembly:

  1. In a mixing bowl, beat butter, powdered sugar, vanilla, and salt until smooth.

  2. Pipe a small amount of buttercream onto one macaron shell and sandwich with another.

  3. Refrigerate for 24 hours for the best texture.

  • Check for Doneness: Shells should be firm with a slight jiggle.
  • Storage: Store in an airtight container in the fridge for up to 5 days.
