  • 6 strips bacon
  • 3 cups white pea beans (navy beans)
  • 1 can (28 oz) diced tomatoes
  • 2 cups chopped onions
  • 3/4 cup ketchup
  • 3/4 cup fancy molasses
  • 1/3 cup packed brown sugar
  • 1 tbsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Rinse the beans and discard any discolored ones.
  2. Boil beans in a large pot with 9 cups of water for 3 minutes, then let stand for 1 hour and drain.
  3. Boil beans with 12 cups fresh water for 45 minutes, reserving 2 cups of liquid, and drain.
  4. Cook bacon until just done, not crispy.
  5. In a Dutch oven, combine beans, reserved liquid, tomatoes, bacon, onions, ketchup, molasses, brown sugar, mustard, salt, and pepper. Cover and bake at 300ยฐF for 2 1/2 hours, uncover and bake 1 to 1 1/2 hours more.
  6. Serve warm, optionally garnished with fresh herbs or hot sauce.
