- 6 strips bacon
- 3 cups white pea beans (navy beans)
- 1 can (28 oz) diced tomatoes
- 2 cups chopped onions
- 3/4 cup ketchup
- 3/4 cup fancy molasses
- 1/3 cup packed brown sugar
- 1 tbsp dry mustard
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Rinse the beans and discard any discolored ones.
- Boil beans in a large pot with 9 cups of water for 3 minutes, then let stand for 1 hour and drain.
- Boil beans with 12 cups fresh water for 45 minutes, reserving 2 cups of liquid, and drain.
- Cook bacon until just done, not crispy.
- In a Dutch oven, combine beans, reserved liquid, tomatoes, bacon, onions, ketchup, molasses, brown sugar, mustard, salt, and pepper. Cover and bake at 300ยฐF for 2 1/2 hours, uncover and bake 1 to 1 1/2 hours more.
- Serve warm, optionally garnished with fresh herbs or hot sauce.
