Description

Experience the joy of Sourdough Baking with Dill Pickle Sourdough Bread. Transform simple ingredients into a savory masterpiece using a Sourdough Starter and savor the unique tang of pickles in this soft sourdough bread recipe.

Ingredients

Scale
  • 50 grams active sourdough starter
  • 260 grams filtered water, around 85 degrees F
  • 30 grams dill pickle brine
  • 375 grams organic bread flour
  • 35 grams whole wheat flour
  • 7 grams fine sea salt
  • 80 grams chopped dill pickles, patted with paper towel
  • 1 1/2 tablespoons finely chopped fresh dill

Instructions

  1. Mix the starter, water, and brine in a large bowl until the starter is dispersed.
  2. Add flours and mix with a spatula, then hand, until a shaggy dough forms. Ensure no visible flour remains.
  3. Sprinkle salt on the dough, cover with a damp cloth, and let sit for 40 minutes.
  4. Knead dough for 2 minutes to incorporate salt, then perform first set of stretch and folds. Let rest covered for 30 minutes.
  5. Sprinkle pickles and dill over the dough, perform stretch and folds. Repeat resting and folding two more times, for a total of four sequences.
  6. Allow the dough to bulk ferment until it rises by around 75%, about 4 hours depending on room temperature.
  7. Gently move dough to a floured surface, let rest 10-15 minutes before shaping.
  8. Transfer dough to a flour-dusted, linen-lined banneton, seam side up, and cover. Rise in fridge overnight or on counter for 1.5 hours.
  9. Preheat oven with Dutch oven to 450 degrees F. Once preheated, cover dough with parchment, flip, and score.
  10. Bake covered for 25 minutes, uncover, reduce temperature to 435 degrees F, and bake 20 more minutes. Cool 1 hour before slicing.
