Instructions

  1. Heat the butter and olive oil in a large pot over medium heat. Add the onion and celery, sautΓ©ing until soft and translucent, about 4–5 minutes.
  2. Stir in the garlic, cooking for an additional minute.
  3. Add the potatoes, corn, and shredded chicken to the pot; pour in the chicken broth. Bring to a gentle boil, then simmer for about 10–12 minutes until the potatoes are tender.
  4. Stir in the diced dill pickles and pickle juice, cooking for 2–3 more minutes.
  5. In a separate bowl, whisk the heavy cream or sour cream with flour until smooth. Slowly incorporate into the chowder, cooking for an additional 3–5 minutes until thickened.
  6. Add smoked paprika, salt, and pepper, adjusting seasoning to taste.
  7. Fold in the fresh chopped dill and remove the pot from the heat.
